Toasted bread rubbed with ripe tomato, garlic and olive oil is proof that a few good ingredients can make a deeply satisfying tapas bite.

Serves: 6 people

Preparation time: 180 min

Ingredients

  • Rustic bread or baguette – 1 loaf
  • Ripe tomatoes – 4
  • Garlic – 2 cloves
  • Extra virgin olive oil – 4 tbsp
  • Sea salt – to taste

Method

STEP 1
Slice the bread and toast it until crisp at the edges but still slightly chewy in the middle.
STEP 2
Cut the tomatoes in half and peel the garlic cloves, keeping them whole because they are used for rubbing.
STEP 3
While the bread is warm rub one side of each slice lightly with garlic.
STEP 4
Rub the cut side of a tomato firmly over each slice so the juices and flesh soak into the toast.
STEP 5
Drizzle with olive oil, sprinkle with sea salt and serve immediately.
