This Romanian soup with meatballs and vegetables has a bright, lightly sour finish from lemon.
Serves: 4 people

Ingredients
- ground beef – 14 oz
- rice – 1/4 cup
- onion – 1 small, grated
- egg – 1
- parsley – 2 tbsp, chopped
- carrots – 2, small diced
- celery stalks – 2, finely sliced
- red bell pepper – 1, diced
- chicken stock – 6 cups
- diced tomatoes – 1 can (14 oz)
- lemon juice – 3 tbsp
- salt – to taste
- black pepper – to taste
Method
Step 1
Mix the ground beef with the rice, grated onion, egg, parsley, salt, and black pepper and roll small meatballs.
Step 2
Bring the chicken stock, carrots, celery, bell pepper, and diced tomatoes to a boil and simmer for 10 minutes.
Step 3
Gently lower the meatballs into the broth and cook the soup for another 15 minutes.
Step 4
Stir in the lemon juice and check the seasoning.
Step 5
Serve the soup hot.
