Roasted cauliflower chickpea salad

A fiber-rich salad with roasted cauliflower, chickpeas, parsley and lemon.

Serves: 4 people

Preparation time: 25 min

Ingredients

  • Cauliflower – 1 head
  • Chickpeas – 2 cans
  • Red onion – 1
  • Parsley – 1 bunch
  • Lemon – 1
  • Olive oil – 3 tbsp
  • Cumin – 1 tsp
  • Black pepper – to taste

Method

STEP 1 Roast the cauliflower and chickpeas with olive oil and cumin until golden.
STEP 2 Cool slightly and place in a bowl with red onion.
STEP 3 Add parsley and lemon juice.
STEP 4 Toss and serve warm or cold.
