Mustard gives roast pork exactly the kind of sharp savoury lift that works so well with its rich juices. This version stays simple and comforting, with a glossy sauce and a gently seasoned roast.
Serves: 4 people

Ingredients
- Pork roast – 1 kg
- Butter – 40 g
- Wholegrain mustard – 3 tbsp
- Dijon mustard – 1 tbsp
- Honey – 1 tbsp
- Shallot – 1
- White wine or stock – 150 ml
- Thyme – 2 sprigs
- Salt and black pepper – to taste
Method
1. Season the pork well and brown it in butter until deeply coloured all over.
2. Mix the mustards with the honey and brush most of the mixture over the roast. Add the shallot and thyme to the pan.
3. Transfer the pan to a 180°C oven and roast until tender, spooning over the juices once or twice during cooking.
4. Remove the meat and let it rest. Deglaze the pan with white wine or stock and stir in the remaining mustard mixture for a glossy sauce.
5. Slice the pork and serve with the mustard sauce and potatoes or green vegetables.
