Roast pork with gratinated potatoes

This is the kind of roast pork dinner that feels generous from the moment it comes out of the oven. A savoury beer-and-mustard sauce and creamy gratinated potatoes make it especially good for weekends and guests.

Serves: 6 people

Preparation time: 40 min

Ingredients

  • Pork roast – 1 kg
  • Butter – 50 g
  • Shallots – 2
  • Garlic – 2 cloves
  • Rosemary – 1 sprig
  • Blond beer – 250 ml
  • Wholegrain mustard – 1 tbsp
  • Cream – 100 ml
  • Potatoes – 1.2 kg
  • Leek – 1
  • Onion – 1
  • Salt and black pepper – to taste

Method

1. Brown the pork roast in butter until all sides are golden. Add the shallots, garlic and rosemary and roast in the oven until the meat is tender.
2. Layer sliced potatoes with leek and onion in a baking dish, season well and bake until soft and lightly coloured on top.
3. Lift the pork from the pan and let it rest under foil.
4. Add the beer and mustard to the roasting pan and simmer the juices until full of flavour, then finish with cream for a smoother sauce.
5. Slice the pork and serve it with the potato gratin and plenty of the beer-and-mustard gravy.
