Soft sweet potato and red lentils make a mild, earthy plant-based pâté that works well with toast, crackers or raw vegetables.
Serves: 6 people

Ingredients
- Red lentils – 150 g
- Sweet potato – 300 g, peeled and diced
- Onion – 1 small
- Garlic – 2 cloves
- Ground cumin – 1 tsp
- Paprika – 1/2 tsp
- Olive oil – 2 tbsp
- Lemon juice – 1 tbsp
- Salt – to taste
- Black pepper – to taste
Method
STEP 1
Cook the lentils until soft but not soupy. Roast or steam the sweet potato until completely tender.
STEP 2
Fry the onion and garlic in olive oil until soft, then stir in the cumin and paprika for a few seconds.
STEP 3
Combine the lentils, sweet potato and spiced onion mixture in a processor. Add lemon juice, season well and blend until smooth. Chill before serving so the pâté firms up.
