A sweet-savory rabbit stew with onions, beer and soft prunes.

Serves: 4 people

Preparation time: 85 min

Ingredients

  • rabbit pieces – 3 lb
  • onions – 3
  • butter – 3 tbsp
  • flour – 2 tbsp
  • brown beer – 12 fl oz
  • stock – 1 cup
  • prunes – 7 oz
  • apple syrup or dark syrup – 1 tbsp
  • thyme – 2 sprigs
  • bay leaves – 2
  • salt – to taste
  • black pepper – to taste

Method

1. Pat the rabbit dry and season with salt and pepper. Brown the pieces in butter until golden, then remove them from the pan.
2. Cook the sliced onions in the same pan until soft. Sprinkle over the flour and stir briefly.
3. Return the rabbit, pour in the beer and stock, then add the syrup, thyme and bay. Simmer gently for 1 hour.
4. Add the prunes and continue cooking for 20 to 30 minutes until the rabbit is tender and the sauce is lightly sweet and glossy.
5. Taste and adjust the seasoning.
6. Serve with boiled potatoes, croquettes or bread.
