Quick gazpacho is a delicious dish built around passata, red pepper and red chilli. It has a homemade, generous feel that makes it easy to imagine as the star of the meal, with bright citrus freshness and garlic depth.

Ingredients

  • Passata – 250g
  • Red Pepper – 1 chopped
  • Red Chilli – 1 chopped
  • Garlic – 1 clove peeled crushed
  • Sherry vinegar – 1 teaspoon
  • Lime – Juice of 1/2

Method

step 1
In a blender (or with a stick blender), whizz together the passata, red pepper, chilli, garlic, sherry vinegar and lime juice until smooth. Season to taste, then serve with ice cubes
