Pumpkin Soup with Orange and Mascarpone

A festive pumpkin soup brightened with orange and made extra soft with mascarpone. It is cheerful on the table and very friendly to serve to a crowd.

Serves: 4 people

Preparation time: 25 min

Ingredients

  • olive oil – 2 tbsp
  • onion, chopped – 1 medium
  • pumpkin, diced – 1 1/2 lb
  • carrot, diced – 1 medium
  • vegetable stock – 5 cups
  • orange juice – 1/3 cup
  • orange zest – 1 tsp
  • mascarpone – 1/2 cup
  • salt – 1 tsp
  • black pepper – 1/2 tsp

Method

1. Heat the olive oil and cook the onion for 4 minutes.
2. Add the pumpkin, carrot and stock and simmer for 20 minutes until very soft.
3. Blend the soup until smooth, then stir in the orange juice, orange zest and mascarpone.
4. Season with salt and pepper and warm through gently.
5. Serve hot, optionally with extra orange zest on top.
