This Provençal tomato soup is built around ripe tomatoes, olive oil and plenty of basil. It is bright yet warming, and works beautifully for lunch or a light supper.
Serves: 4 people

Ingredients
- olive oil – 2 tbsp
- onion, chopped – 1 medium
- garlic, minced – 2 cloves
- tomatoes, chopped – 2 lb
- vegetable stock – 4 cups
- tomato paste – 1 tbsp
- fresh basil – 1/2 cup
- heavy cream – 1/4 cup
- salt – 1 tsp
- black pepper – 1/2 tsp
Method
1. Heat the olive oil in a soup pot and soften the onion and garlic for 5 minutes.
2. Add the chopped tomatoes and tomato paste and cook for 5 minutes until the tomatoes start to break down.
3. Pour in the stock and simmer for 20 minutes until the flavours have concentrated.
4. Blend the soup smooth, stir in the basil and cream, and season to taste.
5. Serve hot with extra basil on top.
