These famous Russian chicken cutlets are crisp on the outside, juicy within and deliciously rich thanks to bread and butter in the mix.

Ingredients
- Chicken mince – 700 g
- White bread – 3 slices
- Milk – 120 ml
- Butter – 80 g
- Onion – 1
- Egg – 1
- Breadcrumbs – 120 g
- Salt – 1 tsp
- Black pepper – 1/2 tsp
- Oil – 2 tbsp
Method
Soak the bread in milk and mix it with chicken mince, finely grated onion, butter, egg, salt and pepper.
Shape elongated cutlets and coat in breadcrumbs.
Brown in a pan, then finish in the oven until cooked through.
Serve hot so the interior stays juicy.
