These Portuguese-style mussels are lively and a little fiery, with tomato, garlic, wine and coriander making the broth feel warm-weather bright.

Ingredients
- Fresh mussels – 2 kg
- Olive oil – 3 tbsp
- Onion – 1, chopped
- Garlic – 4 cloves, sliced
- Chopped tomatoes – 300 g
- White wine – 200 ml
- Piri-piri or chili flakes – to taste
- Fresh coriander – 3 tbsp, chopped
- Lemon juice – 1 tbsp
- Salt – to taste
Method
STEP 1
Rinse and check the mussels well, then set them aside.
STEP 2
Heat the olive oil in a pot and cook the onion until soft. Add the garlic and chili and let them perfume the oil without browning too much.
STEP 3
Add the tomatoes and cook them down for a few minutes, then pour in the white wine and let the broth come together.
STEP 4
Tip in the mussels, cover the pot and steam until opened, giving the pan a good shake once halfway through.
STEP 5
Stir in most of the coriander and the lemon juice at the very end, then scatter the rest of the coriander over the bowls when serving.
