Pork roast with garlic and thyme

Garlic and thyme are classic partners for roast pork because they bring fragrance without taking over. This French-style version is straightforward, rustic and excellent with oven potatoes.

Serves: 4 people

Preparation time: 9 min

Ingredients

  • Pork roast – 1 kg
  • Garlic – 6 cloves
  • Thyme – 4 sprigs
  • Olive oil – 1 tbsp
  • Potatoes – 1 kg
  • Salt and black pepper – to taste

Method

1. Rub the pork with olive oil, salt, pepper, garlic and thyme so the flavours can settle into the surface of the meat.
2. Arrange the roast with potatoes in a baking dish or roasting tin.
3. Roast until the pork is golden and the potatoes are tender, turning the potatoes once so they colour evenly.
4. Rest the meat for a few minutes before slicing.
5. Serve the pork with the potatoes and the simple juices from the tin.
