Small toasted rolls filled with tender pork loin, roasted peppers and a little alioli make a generous and very satisfying tapas snack.

Ingredients
- Mini rolls or small baguette pieces – 6
- Pork loin – 500 g
- Roasted red peppers – 180 g
- Alioli or garlic mayonnaise – 100 g
- Olive oil – 2 tbsp
- Smoked paprika – 1/2 tsp
- Salt – to taste
- Black pepper – to taste
Method
STEP 1
Cut the pork loin into thin slices or small medallions that fit neatly on the bread and season them with smoked paprika, salt and pepper.
STEP 2
Heat a frying pan or grill pan until hot and cook the pork for 2 to 3 minutes per side until just cooked through. Let it rest briefly.
STEP 3
Warm or toast the mini rolls so the cut sides are crisp and ready for the filling.
STEP 4
Spread the bread with alioli, add slices of pork and top with strips of roasted red pepper.
STEP 5
Close the montaditos and serve them warm, or secure them with a cocktail stick for tidy tapas portions.
