Few pork roasts look as dramatic as a proper crackling roast with beer sauce. Beneath the crisp crust you get juicy meat and a dark, malty gravy that turns it into a real centrepiece dish.

Ingredients
- Pork crackling roast – 1.8 kg
- Dark beer – 330 ml
- Onions – 2
- Carrots – 2
- Celery – 2 sticks
- Garlic – 3 cloves
- Caraway seeds – 1 tsp
- Salt and black pepper – to taste
Method
1. Score the rind carefully and season the pork generously with salt, pepper and caraway.
2. Roast the meat on a bed of onions, carrots, celery and garlic so the vegetables can build body in the sauce.
3. Add the beer partway through cooking and keep roasting until the crackling is puffed and crisp and the meat underneath is tender.
4. Lift out the roast and let it rest before carving.
5. Strain or blend the vegetables into the beer-rich pan juices and serve that dark sauce with the sliced pork.
