Ponzu Tuna Seaweed Poke Bowl

Sharp ponzu, silky tuna and a good spoonful of seaweed salad make this bowl especially bright and coastal in character.

Serves: 4 people

Preparation time: 25 min

Ingredients

  • Sushi rice – 300 g
  • Rice vinegar – 3 tbsp
  • Tuna, sushi grade – 350 g
  • Ponzu – 3 tbsp
  • Sesame oil – 1 tsp
  • Seaweed salad – 150 g
  • Cucumber – 1/2
  • Avocado – 1
  • Edamame – 150 g
  • Spring onion – 2
  • White sesame seeds – 2 tsp
  • Nori strips – 2 tbsp

Method

STEP 1
Prepare the rice and let it cool to room temperature. That gives you time to get all the cold toppings ready without rushing.
STEP 2
Dice the tuna and mix it with the ponzu and sesame oil. Ponzu is already salty and citrusy, so hold back on adding anything else at first.
STEP 3
Slice the cucumber, trim the spring onion and cut the avocado. If the seaweed salad is in long strands, snip it a little so it is easier to eat in the bowl.
STEP 4
Arrange everything over the rice in generous sections. The bowl should look fresh and layered, not dense.
STEP 5
Finish with sesame and nori and serve right away.
