Polish bigos is a robust stew with cabbage and meat, ideal for anyone who enjoys deep, slowly developed flavours.
What is bigos?
Bigos is often described as Polish hunter’s stew. Cabbage and meat slowly exchange flavours during cooking, which is why the dish often tastes even better the next day.

Ingredients
- sauerkraut – 1 lb
- white cabbage, shredded – 14 oz
- pork shoulder, cubed – 14 oz
- beef, cubed – 10 oz
- smoked sausage, sliced – 9 oz
- onion, chopped – 1
- dried prunes, chopped – 1/2 cup
- tomato paste – 1 tbsp
- beef broth – 1 cup
- bay leaf – 1
- juniper berries, crushed – 4
- butter – 1 tbsp
- salt – 1 tsp
- black pepper – 1/2 tsp
Method
1. Melt the butter in a large pot and brown the onion, pork and beef for 8 minutes.
2. Add the cabbage, sauerkraut, tomato paste, broth, bay leaf and juniper berries.
3. Stir in the prunes and sausage.
4. Let the stew simmer gently for 1 1/2 hours, stirring from time to time.
5. Season with salt and pepper and ideally let it rest a little before serving.
