A creamy, fresh and crowd-pleasing sushi roll with silky salmon, crisp cucumber and rich cream cheese wrapped in lightly seasoned rice.
Serves: 4 people

Ingredients
- Japanese short-grain rice – 300 g
- Rice vinegar – 60 ml
- Sugar – 2 tbsp
- Salt – 1 tsp
- Nori sheets – 4
- Sashimi-grade salmon – 200 g
- Cream cheese – 120 g
- Cucumber – 1
- Sesame seeds – 2 tbsp
Method
Cook and season the rice, then cool until just warm. Place a nori sheet on a bamboo mat, spread rice over it and flip so the nori faces up. Arrange salmon, cream cheese and cucumber in the centre, roll tightly, slice with a wet knife and serve immediately.
