Soft potato fritters with a crisp edge are one of those comforting side dishes that vanish first from a busy rice table.

Ingredients
- Floury potatoes – 700 g
- Egg – 1
- Spring onion – 2
- Nutmeg – 1/4 tsp
- Pepper – 1/2 tsp
- Salt – 1 tsp
- Oil – for frying
Method
Boil the potatoes until tender, drain them well and let off the steam.
Mash the potatoes and mix in the egg, spring onion, nutmeg, pepper and salt.
Shape the mixture into small flat patties.
Pan-fry in a shallow layer of oil until golden on both sides and serve warm.
