A bright, fresh pasta with garlic, tomato and prawns that tastes summery and comes together in one quick pan.
Serves: 4 people
Preparation time: 15 min
Ingredients
- penne – 300 g
- olive oil – 3 tbsp
- garlic – 3 cloves
- diced tomatoes – 400 g
- raw prawns – 250 g
- parsley – 1 handful
- parmesan – to serve
- salt – to taste
- black pepper – to taste
Method
STEP 1
Cook the penne in salted boiling water until al dente.
STEP 2
Heat the olive oil in a large frying pan and gently soften the sliced garlic without letting it brown too hard.
STEP 3
Add the tomatoes, season lightly and simmer for a few minutes until the sauce tastes sweet and fresh instead of raw.
STEP 4
Stir in the prawns and cook just until they turn pink and are cooked through.
STEP 5
Drain the pasta and fold it through the sauce with the parsley.
STEP 6
Serve immediately with black pepper and, if you like, a little parmesan over the top.
