Peking duck pancakes

Crisp duck, sweet hoisin, cool cucumber and spring onion wrapped in soft pancakes: this is the duck feast everyone reaches for first.

Serves: 4 people

Preparation time: 60 min

Ingredients

  • Duck breasts or duck legs – 600 g
  • Chinese five-spice – 2 tsp
  • Salt – 1 tsp
  • Hoisin sauce – 6 tbsp
  • Cucumber – 1
  • Spring onions – 4
  • Mandarin pancakes – 12
  • Honey – 1 tbsp
  • Soy sauce – 1 tbsp

Method

Rub the duck with five-spice, salt, honey and soy sauce. Roast until cooked and crisp, then rest.
Warm the pancakes and cut the cucumber and spring onions into thin strips.
Shred or slice the duck.
Serve everything at the table so everyone can spread hoisin on a pancake, add duck, cucumber and spring onion, then roll it up.
