Ingredients
- Arugula – 120 g
- Romaine lettuce – 1 small
- Pears – 2
- Soft goat cheese – 150 g
- Walnuts – 75 g
- Olive oil – 4 tbsp
- Lemon juice – 2 tbsp
- Honey – 1 tsp
- Wholegrain mustard – 1 tsp
- Salt – to taste
- Black pepper – to taste
Method
STEP 1
Toast the walnuts briefly in a dry pan and let cool.
STEP 2
Whisk olive oil, lemon juice, honey and mustard into a dressing.
STEP 3
Arrange lettuce, pear slices and goat cheese on a platter. Scatter over walnuts and drizzle with dressing.
