These crisp peanut crackers bring the kind of brittle crunch that makes a big rice table feel even more abundant and playful.

Ingredients
- Rice flour – 150 g
- Coconut milk – 200 ml
- Egg – 1
- Garlic – 1 clove
- Coriander powder – 1 tsp
- Peanuts – 120 g
- Salt – 1/2 tsp
- Oil – for frying
Method
Whisk the rice flour, coconut milk, egg, garlic, coriander and salt into a smooth batter.
Stir the peanuts into the batter.
Spoon thin rounds of batter into hot oil and fry until golden and crisp.
Drain well and let the crackers cool so they become extra brittle.
