Crisp potatoes with a warm, smoky tomato sauce make patatas bravas one of the most comforting and crowd-pleasing Spanish tapas dishes around.
Serves: 4 people

Ingredients
- Potatoes – 800 g
- Onion – 1
- Garlic – 2 cloves
- Chopped tomatoes – 400 g
- Tomato purée – 1 tbsp
- Sweet paprika – 1 tsp
- Chili powder – 0.5 tsp
- Olive oil – 3 tbsp
- Salt – to taste
- Black pepper – to taste
Method
1. Cook or roast the potatoes until tender, then crisp them up in the oven or in a hot pan.
2. Meanwhile soften the onion and garlic in olive oil, then add tomatoes, tomato purée, paprika and chili.
3. Simmer the sauce until thick and spoonable, seasoning it well so it tastes bold rather than flat.
4. Pile the potatoes onto a platter and spoon over the warm bravas sauce just before serving.
