Crisp-skinned Arctic char with a glossy butter sauce of tart berries: bright, elegant and made for readers looking for something truly special.

Ingredients
- Arctic char fillets – 4
- Salt – to taste
- Black pepper – to taste
- Butter – 60 g
- Dried cranberries or tart berries – 60 g
- Fish stock – 80 ml
- Lemon juice – 1 tbsp
- Boiled potatoes – to serve
Method
Pat the fish dry and season both sides with salt and pepper.
Heat a frying pan and cook the fish skin-side down first until the skin is crisp. Turn and cook briefly on the other side.
Remove the fish to a warm plate.
In the same pan, melt the butter, add the berries and stock and simmer for 2 to 3 minutes until lightly syrupy.
Finish the sauce with lemon juice and spoon it over the fish. Serve with boiled potatoes.
