Blistered green peppers with flaky salt are one of the simplest Spanish tapas dishes, and that simplicity is exactly why they work so well.
Serves: 4 people
Preparation time: 15 min
Ingredients
- Padrón peppers – 300 g
- Olive oil – 1 tbsp
- Flaky sea salt – to taste
- Lemon wedges – optional
Method
1. Heat a heavy pan until very hot and add the olive oil.
2. Fry the peppers in one layer until blistered and lightly charred in spots, turning them now and then.
3. Transfer to a plate immediately and shower with flaky sea salt.
4. Serve warm as a sharing starter, knowing that one or two peppers may surprise you with extra heat.
