Ingredients
- Chicken thighs – 800 g
- Coconut water – 600 ml
- Garlic cloves – 5
- Shallots – 3
- Lime juice – 1 tbsp
- Salt – 1 tsp
- Oil – 2 tbsp
Method
STEP 1
Rub the chicken with lime juice and salt.
STEP 2
Simmer the chicken with coconut water, garlic and shallots until just cooked.
STEP 3
Remove the chicken and let it drain well.
STEP 4
Fry the chicken very briefly so the outside firms up without becoming too brown.
STEP 5
Serve with sambal and rice.
