Bracing oysters with a sharp Champagne shallot dressing are the very definition of polished seafood luxury.

Ingredients
- Fresh oysters – 24
- Shallot – 1
- Champagne vinegar – 60 ml
- Champagne – 30 ml
- Black pepper, cracked – 1 tsp
- Lemon wedges – to serve
Method
Mix the finely chopped shallot with Champagne vinegar, Champagne and cracked pepper. Open the oysters carefully, loosen them from the shell and spoon a little mignonette over each just before serving.
