Crisp, tangy and wonderfully simple, this bright yellow roll proves that even the most minimalist sushi can be deeply satisfying.

Ingredients
- Japanese short-grain rice – 300 g
- Rice vinegar – 60 ml
- Sugar – 2 tbsp
- Salt – 1 tsp
- Nori sheets – 4
- Pickled daikon (takuan) – 200 g
Method
Cook and season the sushi rice and let it cool. Lay a thin layer of rice on each nori sheet, place strips of pickled daikon in the centre and roll tightly into slim maki. Slice with a damp sharp knife.
