A simple old-school tartare mixed in one bowl with mustard, hot sauce, Worcestershire, brandy and egg, then chilled briefly and served on toast or crackers.

Ingredients
- Lean raw beef, finely chopped – 450 g
- Mustard – 1 tbsp
- Hot pepper sauce – to taste
- Worcestershire sauce – to taste
- Brandy – 1 tbsp
- Egg – 1
- Salt – to taste
- Black pepper – to taste
- Crackers or toast – to serve
Method
STEP 1
Put the chopped beef in a chilled bowl. Add the mustard, hot sauce, Worcestershire sauce, brandy, egg, salt and pepper.
STEP 2
Mix until evenly combined, but stop before the texture becomes pasty. This version is intentionally direct and uncomplicated.
STEP 3
Shape the tartare or spoon it into a shallow dish, cover and chill for about 30 minutes so the flavours settle together.
STEP 4
Serve cold as a spread with crackers or crisp toast.
