Orange and almond cake is deeply fragrant and wonderfully moist, with ground almonds giving the crumb extra richness. The citrus mascarpone on the side makes it feel both festive and refined.
Serves: 8 people
Ingredients
- Oranges – 2
- Ground almonds – 250 g
- Sugar – 200 g
- Eggs – 5
- Baking powder – 1 tsp
- Mascarpone – 500 g
- Orange liqueur – 3 tbsp
- Marmalade – 3 tbsp
Method
Simmer the whole oranges in water until very soft, then cool them and blend to a puree, removing any pips.
Whisk the eggs and sugar until thick, then fold in the orange puree, ground almonds and baking powder.
Pour into a lined tin and bake at 170°C for about 45 to 55 minutes until set and golden.
Cool the cake completely before turning it out.
Mix the mascarpone with the orange liqueur and marmalade to taste.
Serve the cake in slices with a generous spoonful of citrus mascarpone.
