Chicken gently braised in coconut milk with lemongrass, coriander and warming spices, soft and comforting.
What is opor ayam?
Opor ayam is chicken in a mild Indonesian coconut sauce with spices such as coriander, lemongrass and galangal. It is gentler than many hot curries and pairs well with rice or festive rice dishes.

Ingredients
- Chicken drumsticks or thighs – 1 kg
- Coconut milk – 700 ml
- Onion – 2
- Garlic cloves – 4
- Fresh ginger – 3 cm
- Ground coriander – 2 tsp
- Cumin – 1 tsp
- Lemongrass stalks – 2
- Bay leaves – 2
- Candlenuts or cashews – 3 tbsp
- Salt – to taste
Method
STEP 1
Blend onion, garlic, ginger and candlenuts into a smooth paste.
STEP 2
Fry the paste with coriander, cumin, lemongrass and bay leaves until fragrant.
STEP 3
Add the chicken pieces and turn them through the spices.
STEP 4
Pour in the coconut milk and simmer gently for 35 to 45 minutes until the chicken is tender.
STEP 5
Season and serve with rice, fried onions and sambal.
