One-pot tomato orzo is exactly the sort of dinner that rescues a busy evening. It cooks in one pan, tastes deeply tomatoey and savoury, and lands on the table with almost no fuss and very little washing up.
Serves: 4 people
Ingredients
- olive oil – 2 tbsp
- red onion – 1, chopped
- garlic – 2 cloves, chopped
- orzo – 300 g
- chopped tomatoes – 400 g
- vegetable stock – 700 ml
- cherry tomatoes – 200 g
- parmesan – 50 g, grated
- mozzarella – 125 g, torn
- fresh parsley – 2 tbsp, chopped
- salt – to taste
- black pepper – to taste
Method
STEP 1
Heat the oil and fry the onion until softened, then stir in the garlic.
STEP 2
Add the orzo, tinned tomatoes and stock, then bring everything to a gentle simmer.
STEP 3
Stir regularly so the pasta cooks evenly and becomes creamy as it absorbs the liquid.
STEP 4
Add the cherry tomatoes near the end so they soften without losing all their shape.
STEP 5
Finish with parmesan, mozzarella and parsley, season well and serve while the cheese is melting.
