A classic French herb omelette, soft inside and finished in minutes.
Serves: 2 people

Ingredients
- eggs – 4
- butter – 20 g
- chives – 1 tbsp
- parsley – 1 tbsp
- tarragon – 1 tsp
Method
STEP 1
Beat the eggs with a pinch of salt and pepper until the yolks and whites are fully blended. Stir in the chopped herbs at the end so they keep their fresh aroma.
STEP 2
Melt the butter in a non-stick frying pan over medium-low heat until it foams. Pour in the eggs and swirl the pan so the base is evenly covered.
STEP 3
As the omelette begins to set, drag a spatula gently through the middle and tilt the pan so uncooked egg runs into the gap. Repeat once or twice until the top is just barely set.
STEP 4
Fold the omelette in half and slide it straight onto a plate. Serve immediately, while the inside is still soft.
