This old-school Flemish combination is all about comfort, thrift and deep satisfaction. Roast pork, cauliflower and cheese sauce may sound simple, but together they make a dish with real staying power.

Ingredients
- Pork roast – 1 kg
- Butter – 40 g
- Cauliflower – 1 large
- Milk – 500 ml
- Flour – 30 g
- Cheese – 120 g
- Nutmeg – 1 pinch
- Salt and black pepper – to taste
Method
1. Brown and roast the pork until juicy and properly cooked, letting it rest before carving.
2. Divide the cauliflower into florets and cook or steam them until tender but still holding their shape.
3. Make a white sauce with butter, flour and milk, then melt the cheese into it and season with pepper, salt and nutmeg.
4. Slice the roast and arrange it with the cauliflower on a warm platter.
5. Spoon the cheese sauce over the cauliflower and serve the rest alongside the pork.
