This Norwegian potato and leek soup is soft, creamy and simple in style. Its mild flavor makes it ideal for lunch or as a starter in a Scandinavian meal.

Ingredients
- butter – 2 tbsp
- leeks, sliced – 2
- onion, finely chopped – 1
- potatoes, diced – 1.3 lb
- vegetable stock – 5 cups
- heavy cream – 2/3 cup
- nutmeg – 1/4 tsp
- chives, snipped – 2 tbsp
- salt – 1 tsp
- white pepper – 1/2 tsp
Method
1. Melt the butter and soften the leeks and onion for 4 minutes.
2. Add the potatoes and stock and simmer for 18 minutes until the potatoes are tender.
3. Blend the soup until smooth. Stir in the cream and nutmeg and warm for 2 minutes more.
4. Season with salt and white pepper.
5. Serve with chives scattered over the top.
