This North French winter soup is simple, sturdy and perfect for rough weather. Leeks and potatoes form a soft base, while sausage makes the soup savory and filling.

Ingredients
- butter – 1 1/2 tbsp
- onion, chopped – 1 medium
- leeks, sliced – 2 large
- carrots, diced – 2 medium
- potatoes, diced – 14 oz
- chicken stock – 5 cups
- smoked sausage, sliced – 9 oz
- fresh thyme – 1 tsp
- coarse mustard – 1 tbsp
- heavy cream – 3 tbsp
- salt – 1/2 tsp
- black pepper – 1/2 tsp
Method
1. Melt the butter in a large pot and cook the onion, leeks and carrots for 5 minutes.
2. Add the potatoes, stock and thyme and simmer for 20 minutes.
3. Add the sausage to the pot and let it cook for another 8 minutes.
4. Stir in the mustard and cream and warm through briefly.
5. Season with salt and pepper and serve piping hot.
