Rich coconut rice with pandan and lemongrass gives a rijsttafel extra depth and turns even simple side dishes into a feast.

Ingredients
- Long-grain rice – 300 g
- Coconut milk – 250 ml
- Water – 220 ml
- Pandan leaf – 1
- Lemongrass – 1 stalk
- Bay leaf – 2
- Salt – 1 tsp
Method
Rinse the rice well and drain it.
Put the rice, coconut milk, water, pandan, lemongrass, bay leaves and salt in a pan.
Bring to a boil, cover and cook on low heat for 12 to 15 minutes.
Let the rice rest for 10 minutes, remove the aromatics and fluff before serving.
