Not fussy at all, but still one of the great bistro seafood dishes: briny mussels in fragrant white wine cream with shallots and herbs.

Ingredients
- Fresh mussels – 2 kg
- Shallots – 3
- Garlic – 3 cloves
- Butter – 40 g
- Dry white wine – 250 ml
- Heavy cream – 150 ml
- Parsley – 3 tbsp
- Thyme – 1 tsp
- Black pepper – to taste
Method
Sweat the shallots and garlic in butter, add wine and thyme and bring to a boil. Add the mussels, cover and steam until they open. Stir in the cream and parsley and serve immediately with bread or fries.
