Golden toasted bread topped with buttery mushrooms, a little garlic and herbs: simple Italian comfort that works beautifully as a warm starter.

Serves: 4 people

Preparation time: 30 min

Ingredients

  • Ciabatta or country bread – 8 slices
  • Mixed mushrooms – 400 g
  • Garlic – 2 cloves
  • Butter – 25 g
  • Olive oil – 2 tbsp
  • Parsley – 2 tbsp
  • Lemon zest – 1 tsp
  • Parmesan – 30 g
  • Salt – to taste
  • Black pepper – to taste

Method

1. Toast the bread slices in the oven or in a grill pan until crisp on the outside.
2. Fry the mushrooms in butter and olive oil over high heat so they colour nicely instead of steaming. Add the garlic only at the end so it stays fragrant.
3. Stir through parsley, lemon zest, salt and pepper, then spoon the mushroom mixture generously onto the toast.
4. Finish with parmesan and serve straight away while the bread is still crisp and the topping is juicy.
