The muffuletta is a big, layered sandwich that tastes even better after it has rested. The olive salad is what makes it unmistakable: salty, bright and juicy enough to perfume the whole loaf.

Ingredients
- Round sesame loaf or large sandwich loaf – 1
- Green olives, chopped – 100 g
- Black olives, chopped – 100 g
- Roasted red peppers, chopped – 100 g
- Pickled vegetables, chopped – 75 g
- Olive oil – 4 tbsp
- Red wine vinegar – 2 tbsp
- Salami – 150 g
- Mortadella – 150 g
- Capicola or ham – 150 g
- Provolone – 150 g
Method
1. Mix the chopped olives, peppers, pickled vegetables, olive oil and vinegar into a rough olive salad.
2. Cut the loaf open horizontally and hollow it out slightly if needed so the filling sits nicely.
3. Spoon some olive salad over both cut sides of the bread and let it soak in for a few minutes.
4. Layer the meats and provolone generously inside the loaf.
5. Close the sandwich tightly, wrap it well and let it rest for at least 30 minutes. This resting time matters.
6. Cut into wedges and serve.
