A warmly spiced tomato stew with chickpeas and vegetables, naturally gluten-free and filling.
Serves: 4 people
Preparation time: 25 min
Ingredients
- Olive oil – 1 tbsp
- Onion – 1
- Garlic – 2 cloves
- Carrots – 2
- Zucchini – 1
- Ground cumin – 1 tsp
- Cinnamon – 1/2 tsp
- Paprika – 1 tsp
- Canned tomatoes – 800 g
- Chickpeas – 480 g
- Parsley – 1 handful
Method
STEP 1 Fry onion, garlic and vegetables until starting to soften.
STEP 2 Add the spices, tomatoes and chickpeas.
STEP 3 Simmer for 25 minutes until rich and tender.
STEP 4 Finish with parsley and serve as a stew or over rice.
