Mississippi mud pie is unapologetically rich in the best possible way. With its biscuit crust, fudgy middle and creamy top, it is the sort of American chocolate dessert that really delivers on texture.

Serves: 10 people

Preparation time: 180 min

Ingredients

  • Chocolate biscuits, crushed – 250 g
  • Unsalted butter, melted – 100 g
  • Dark chocolate – 250 g
  • Butter – 125 g
  • Eggs – 3
  • Caster sugar – 180 g
  • Plain flour – 75 g
  • Double cream – 400 ml
  • Milk – 300 ml
  • Egg yolks – 3
  • Cornflour – 1 tbsp

Method

1. Mix the biscuit crumbs with melted butter and press into a pie tin to make the crust.
2. Bake or chill the crust until firm.
3. Make a fudgy brownie-style filling with melted chocolate, butter, eggs, sugar and flour, then bake it in the crust.
4. Cook a chocolate custard from milk, cream, yolks, cornflour and chocolate until thick and glossy.
5. Pour the custard over the cooled brownie layer.
6. Chill until the pie is completely cold and set.
7. Whip the remaining cream until soft and spoon it generously over the top.
8. Finish with grated chocolate before serving.
