A richer Japanese-style swordfish dish where miso butter gives this robust fish the kind of glossy finish you expect in a high-end bistro.

Ingredients
- Swordfish steaks – 4
- Unsalted butter – 70 g
- White miso – 2 tbsp
- Mirin – 2 tbsp
- Lemon juice – 1 tbsp
- Ginger, grated – 1 tsp
- Spring onion – 2
- Sesame seeds – 1 tsp
Method
Pan-roast or grill the swordfish until just cooked. Melt the butter with miso, mirin, lemon and ginger into a glossy sauce. Spoon over the fish and finish with spring onion and sesame.
