A light noodle salad with a savoury miso dressing, juicy prawns and plenty of fresh crunch.
Serves: 4 people
Preparation time: 15 min
Ingredients
- rice noodles – 300 g
- miso paste – 2 tbsp
- ginger – 1 thumb-sized piece
- lime juice – 2 tbsp
- sesame oil – 1 tbsp
- cooked prawns – 300 g
- cucumber – 1
- spring onions – 4
- coriander – 1 handful
Method
STEP 1
Cook or soak the noodles according to the packet instructions, then rinse under cold water and drain well.
STEP 2
Whisk the miso, grated ginger, lime juice and sesame oil into a smooth dressing.
STEP 3
Slice the cucumber and spring onions finely and put them in a large bowl with the prawns.
STEP 4
Add the noodles and pour over the dressing.
STEP 5
Toss everything together until the noodles are evenly coated.
STEP 6
Finish with coriander and serve straight away, cold or at cool room temperature.
