Sweet onion and tangy goat cheese tucked into crisp tartlets make a rich, deeply savoury amuse for colder months.
Serves: 6 people

Ingredients
- Mini tartlet shells – 12
- Onions – 2
- Butter – 20 g
- Brown sugar – 1 tsp
- Balsamic vinegar – 1 tsp
- Goat cheese – 100 g
- Thyme – 1 tsp
Method
STEP 1
Slice the onions thinly and cook them slowly in butter until very soft.
STEP 2
Add brown sugar and balsamic vinegar and continue cooking until the onions become deep golden and jammy.
STEP 3
Fill the tartlet shells with a little onion.
STEP 4
Top with goat cheese and thyme.
STEP 5
Warm briefly in the oven so the cheese softens slightly, then serve.
