Mini sausage rolls are the kind of hand-held dinner or snack children can eat without much fuss. Flaky pastry, savoury sausage filling and small portions make them especially useful for lunch boxes, easy suppers or casual family evenings.

Ingredients
- Puff pastry – 2 sheets
- Sausage meat – 400 g
- Egg – 1, beaten
- Mustard – 1 tsp
- Dried herbs – 1 tsp
- Black pepper – to taste
Method

Mix the sausage meat with the mustard, herbs and pepper so the filling is evenly seasoned.

Lay the pastry sheets out and shape the sausage filling into long logs down the middle.

Fold the pastry over the filling, seal the edges well and cut into small rolls of equal size.

Brush with beaten egg and chill briefly if you have time. That helps the pastry hold its shape better in the oven.

Bake until puffed, deep golden and cooked through. Let them cool just slightly before serving so the filling is not too hot.
