These tiny lobster rolls feel decadent and celebratory, with buttery bread and sweet lobster in every bite.

Serves: 6 people

Preparation time: 90 min

Ingredients

  • Cooked lobster meat – 220 g
  • Mayonnaise – 2 tbsp
  • Lemon juice – 1 tbsp
  • Chives – 1 tbsp
  • Mini brioche rolls – 8
  • Butter – 20 g
  • Celery – 1 tbsp finely chopped

Method

STEP 1
Mix the lobster with mayonnaise, lemon juice, celery and chives.
STEP 2
Taste and season lightly so the lobster remains the star flavour.
STEP 3
Split the mini brioche rolls and butter the cut sides.
STEP 4
Toast the rolls lightly in a pan until the buttered sides are golden.
STEP 5
Fill each roll with the lobster mixture and serve straight away.
