This starter leans on contrast: juicy melon, creamy mozzarella and silky cured ham with a light mustard vinaigrette that keeps everything fresh and summery.

Ingredients
- Ripe cantaloupe or galia melon – 1
- Mozzarella – 2 balls
- Prosciutto or cured ham – 8 slices
- Rocket – 75 g
- Olive oil – 3 tbsp
- White wine vinegar – 1 tbsp
- Dijon mustard – 1 tsp
- Black pepper – to taste
- Sea salt – a pinch
Method
1. Halve the melon, remove the seeds and scoop or cut the flesh into elegant bite-size pieces.
2. Tear the mozzarella into generous pieces and whisk the olive oil, vinegar and mustard into a soft vinaigrette.
3. Divide the rocket over chilled plates, add the melon and mozzarella, then drape the ham loosely over the top.
4. Spoon over the dressing, finish with black pepper and serve immediately while the salad stays cool and lively.
