A quick salad of chickpeas, cucumber, tomato, herbs and feta for an easy gluten-free lunch.
Serves: 4 people
Preparation time: 15 min
Ingredients
- Chickpeas – 480 g
- Cucumber – 1
- Cherry tomatoes – 250 g
- Red onion – 1/2
- Parsley – 1 handful
- Feta – 120 g
- Olive oil – 3 tbsp
- Lemon – 1
Method
STEP 1 Drain the chickpeas and combine with chopped cucumber, tomatoes and onion.
STEP 2 Add parsley and feta.
STEP 3 Dress with olive oil and lemon juice and toss well.
